Love, Love, Love me some warm, comforting, “green” soup in the fall and winter months. This fits the bill, and I find that I come back to this recipe often. High in protein and bone-building nutrients from the kale, this is a dish that fits the bill of comfort, warmth and health!

Love, Love, Love me some warm, comforting, “green” soup in the fall and winter months. This fits the bill, and I find that I come back to this recipe often. High in protein and bone-building nutrients from the kale, this is a dish that fits the bill of comfort, warmth and health!
Ingredients
- 1 pc Medium Onion
- 4 cloves Garlic minced
- 5 c Chicken or Vegetable Broth
- ½ lb Keilbasa Sausage optional
- 1 pc Medium Carrot chopped
- 1 pc Celery Stalk chopped
- 1 can Navy White Beans drained
- 2 pcs Potatoes washed and diced
- 1 bunch Kale 3 cups
- ½ pc Jalapeno diced
- 3 tsp dried thyme
- 2 tsp sage
- sprig or 2 fresh rosemary
- cayenne pepper optional
- 1 15 ½ oz can of whole-fat coconut milk
Instructions
- Sauté onion, garlic in coconut oil until onion is limp. Add rest of ingredients, except kale, and bring to a boil. Simmer 30 minutes or until vegetables are tender. Add kale and can of coconut milk. Bring to a boil. Add salt, pepper, cayenne pepper to taste. Enjoy!
