Love, Love, Love me some warm, comforting, “green” soup in the fall and winter months.  This fits the bill, and I find that I come back to this recipe often.  High in protein and bone-building nutrients from the kale, this is a dish that fits the bill of comfort, warmth and health!

 

Ingredients

1 medium onion

4 cloves garlic, minced

5 c. chicken or vegetable broth

1/2 lb. kielbasa sausage (optional)

1 medium carrot, chopped

1 celery stalk, chopped

1 can navy white beans, drained

2 potatoes, washed, and diced

1 bunch kale (3 cups)

1/2 jalapeno, diced

3 tsp. dried thyme

2 tsp. sage

Sprig or two of fresh rosemary

Cayenne pepper (optional)

1 15 1/2 oz. can of whole-fat coconut milk

 

Directions

Sauté onion, garlic in coconut oil until onion is limp.  Add rest of ingredients, except kale, and bring to a boil.  Simmer 30 minutes or until vegetables are tender.  Add kale and can of coconut milk.  Bring to a boil.  Add salt, pepper, cayenne pepper to taste.  Enjoy!
