Pumpkin Pie Larabars

If you are looking for a quick and easy energy snack to put in the lunch box and have as a post work out snack, then this is it. Easy to make ahead, this recipe is a winner for the whole family!

  • ½ cup canned pumpkin pureed
  • 2 tbsp chia seeds
  • 1 cup dates dried, pitted
  • ¼ tsp cinnamon
  • 1 cup walnuts
  • tsp ginger
  • 1 cup almonds
  • tsp ginger
  • tsp nutmeg
  • 4 tbsp coconut oil


  • Mix all ingredients in food processor until a creamy paste forms.
  • Press mixture down into a loaf pan that is well oiled.
  • Refrigerate at least one hour to harden. Enjoy!
