Pumpkin Pie Larabars
If you are looking for a quick and easy energy snack to put in the lunch box and have as a post work out snack, then this is it. Easy to make ahead, this recipe is a winner for the whole family!
½ cup pureed canned pumpkin 2 tablespoons chia seeds
1 cup dried, pitted dates ¼ teaspoons cinnamon
1 cup walnuts 1/8 teaspoons ginger
1 cup almonds 1/8 teaspoon nutmeg
4 tablespoons coconut oil
Mix all ingredients in food processor until a creamy paste forms. Press mixture down into a loaf pan that is well oiled. Refrigerate at least one hour to harden. Enjoy! Keep refrigerated. Serves 8
