
Pumpkin Pie Larabars
If you are looking for a quick and easy energy snack to put in the lunch box and have as a post work out snack, then this is it. Easy to make ahead, this recipe is a winner for the whole family!
Ingredients
- ½ cup canned pumpkin pureed
- 2 tbsp chia seeds
- 1 cup dates dried, pitted
- ¼ tsp cinnamon
- 1 cup walnuts
- ⅛ tsp ginger
- 1 cup almonds
- ⅛ tsp ginger
- ⅛ tsp nutmeg
- 4 tbsp coconut oil
Instructions
- Mix all ingredients in food processor until a creamy paste forms.
- Press mixture down into a loaf pan that is well oiled.
- Refrigerate at least one hour to harden. Enjoy!
