Superfood Blueberry Spinach Salad

This is definitely my families’ favorite green salad.  I make this at least once a week, usually more.  Each ingredient was chosen for its high nutrient and super food quality.  This is my number one anti-inflammatory, anti-cancer, and weight-loss salad, and for building one’s immunity!

4 cups fresh spinach

1 red pepper, sliced

½ cup chopped broccoli

1 green onion

1/2 cup walnuts

1 cup fresh blueberries

Spicy Vinaigrette

1 tbsp. MCT oil, or olive oi

1/2 tbsp. lemon juice

1 garlic clove, crushed

1/2 inch fresh ginger, diced

salt to taste, dash cayenne pepper.

Mix all ingredients of Spicy Vinaigrette into small bowl.  Toss with salad.
