
Superfood Blueberry Spinach Salad
This is definitely my families’ favorite green salad. I make this at least once a week, usually more. Each ingredient was chosen for its high nutrient and super food quality. This is my number one anti-inflammatory, anti-cancer, and weight-loss salad, and for building one’s immunity!
Ingredients
- 4 cups spinach fresh
- 1 red pepper sliced
- ½ cup broccoli chopped
- 1 green onion
- ½ cup walnuts
- 1 cup blueberries fresh
- Spicy Vinaigrette
- 1 tbsp MCT oil or olive oil
- ½ tbsp lemon juice
- 1 clove garlic crushed
- ½ inch ginger fresh, diced
- salt to taste
- dash cayenne pepper
Instructions
- Mix all ingredients of Spicy Vinaigrette into a small bowl. Toss with salad.
