Superfood Blueberry Spinach Salad

This is definitely my families’ favorite green salad. I make this at least once a week, usually more. Each ingredient was chosen for its high nutrient and super food quality. This is my number one anti-inflammatory, anti-cancer, and weight-loss salad, and for building one’s immunity!
Prep Time 10 minutes


  • 4 cups spinach fresh
  • 1 red pepper sliced
  • ½ cup broccoli chopped
  • 1 green onion
  • ½ cup walnuts
  • 1 cup blueberries fresh
  • Spicy Vinaigrette
  • 1 tbsp MCT oil or olive oil
  • ½ tbsp lemon juice
  • 1 clove garlic crushed
  • ½ inch ginger fresh, diced
  • salt to taste
  • dash cayenne pepper


  • Mix all ingredients of Spicy Vinaigrette into a small bowl.  Toss with salad.
